Vegan Hamburger Soup Recipe – Vegetable Casserole Recipe – Hamburgers
Recipe for Hamburers in a creamy gravy with vegetables.
Ingredients 1 medium sized chicken breast, skinless and cut into 1/2-inch cubes (you can also use boneless skinless chicken breasts) 1 medium size onion, diced 1 medium green bell pepper, diced 2 large carrots, diced 4-5 small potatoes, peeled and diced 1 large tomato, diced 3-4 cloves garlic, minced 1 tbsp soy sauce, plus more for serving (plus more for marinating the vegetables) 3 tbsp nutritional yeast 1/4 cup soy sauce 1/3 cup vegetable broth (or regular broth) 1 tbsp extra virgin olive oil 1 tsp salt and freshly ground black pepper to taste Instructions Heat the oil in a large skillet or Dutch oven over medium heat.
Add the onion and bell pepper and saute until softened.
Add in the carrots, bell pepper & potatoes, saute for 2-3 minutes or until the vegetables are soft.
Add salt and pepper to the pan and bring to a boil.
Add more broth if needed.
Add tofu to the skillet and cook for about 10-12 minutes or till softened.
Meanwhile, add the soy sauce and broth to the pot and bring it to a simmer.
Add soy sauce to the vegetables, mix well, add in the tomatoes and garlic, and sauté for another minute or two.
Add to the chicken and cook until the meat is cooked through and the gravy is thickened, about 5-6 minutes.
Add cornstarch and stir to combine.
Simmer for another 5-7 minutes or so, until the soup is thick and creamy.
Taste and adjust seasoning.
Serve with marinara sauce if desired.
Recipe Notes * If you’re looking for a vegan way to prepare the vegetables and make them vegetarian, I’ve found a great way to do this, just add a little bit of salt and garlic to your broth.
I’ve also found that adding a little soy sauce makes a huge difference for me, it really helps the meat flavor.
* If the ham is not your thing, feel free to use chicken breast or boneless chicken.
I personally like to serve it as a soup dish, but you could also try adding a few cubes of ham to the broth.
* Try serving the soup as a sandwich or with some salad.
The vegetables will be in a wonderful and creamy sauce and it will be delicious on its own!
