How to prepare veggie soup, vegetable pasta: 4 easy ways
COOKING THE SOUP Vegetable soup and pasta dishes have become popular in recent years.
It’s not as healthy as you might think and can contain some calories, but it’s still a good way to add protein to your diet.
How do you make it?
The easiest way is to make the dish in advance.
This recipe makes about six cups.
You’ll need about 1 1/2 cups of pasta water and 1 cup of broth, along with 2 tablespoons of minced garlic.
For this recipe, I used a bag of spaghetti noodles.
You can use any type of noodles, but this recipe is vegetarian.
It will make about 1 cup.
Put all of the ingredients into a food processor and pulse until they’re combined.
Add the noodles and process for about 30 seconds.
Pour the mixture into a large bowl.
Add 1 tablespoon of salt, pepper, and black pepper.
If you want, you can add a little more broth to the bowl.
Put the bowl in the refrigerator for a couple of hours.
When you’re ready to eat, add the remaining ingredients to the food processor.
Blend on high until smooth.
Add a little extra water if you want to thin the soup.
Serve with sliced veggies, cheese, and sauce.
Notes The soup can be served with steamed vegetables or leftovers.
